Individual Apple Pies

We are all human (mostly) and we all know how obsessive you can get once you get a craving for something. Like how you might strangle someone if you don’t get the thing you’re craving. As scientists, we’ve tried analyzing the physics of cravings, but usually we cave in way too early to get any kind of results. Which was exactly the case when these little invidual puff pastry apple pies came to be.

As scientists, we know the end of the world is nigh, so we’re usually stocked up with the bare necessities just in case of an apocalypse: butter by the pound, several sheets of frozen puff pastry and some sort of fruit or berry. That right there is pretty much all you need for this recipe.

The puff pastry sheets at hand were coincidentally the perfect size for these pies, but they would have been just as great if we’d rolled out the sheets and made four smaller pies. These little pies are full of potential (like your younger self), so don’t be afraid to play around with this recipe. First, brush the sheets with some melted butter – for funsies, we decided to put brown sugar and cinnamon directly in the butter.IMG_6813

To ensure your little pies don’t poof up too much in the oven, use a fork to poke some little holes in the pastry. Place some not-too-thick apple slices evenly on your pie, leaving some space to the sides, about 1 cm. Brush the slices with that same butter mixture, or sprinkle sugar and cinnamon on top – or vanilla sugar or marmelade, go crazy! Bake at 180°C until golden. Enjoy!IMG_6818
