When life (or your mom) gives you lemons, make lemon cakes! Obviously, you already knew this. It is just the circle of life. This scientist decided to look for a recipe in her favourite recipe book with that terrible scone recipe that she keeps forgetting is terrible, so she keeps making the scones and then she’s like “these scones are terrible”. The lemon drizzle cake, however, is actually really good!
We are all human (mostly) and we all know how obsessive you can get once you get a craving for something. Like how you might strangle someone if you don’t get the thing you’re craving. As scientists, we’ve tried analyzing the physics of cravings, but usually we cave in way too early to get any kind of results. Which was exactly the case when these little invidual puff pastry apple pies came to be.
Boterkoek can be roughly translated to butter cake (or LITERALLY butter cookie) and the name doesn’t lie! Not even in the name of science! Except that it does lie, it is not a cookie.
